I made this dip for my family this past Thanksgiving and was it ever a hit! I love finding ways to edit recipes to make them healthier and higher in protein. Try this out for your next get together. It’s especially tasty when paired with pita or baguette crackers!
14 oz chopped artichoke hearts drained well (1.5 cups)
5 oz thawed, drained frozen spinach drained well, (2.5 cups)
1 cup non fat greek yogurt
½ cup 4% cottage cheese
1 cup shredded mozzarella cheese divided
1 cup shredded cheddar cheese divided
¼ cup grated parmesan cheese
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon onion powder
Preheat your oven to 400°F (200°C).
Thaw and drain the spinach thoroughly. This step is key to preventing a watery dip. Use a fine-mesh strainer and paper towels, squeezing out as much excess moisture as possible.
In a large mixing bowl, combine the artichoke hearts, spinach, Greek yogurt, cottage cheese, ½ cup mozzarella cheese, ½ cup cheddar cheese, Parmesan cheese, and seasonings. Stir until everything is well incorporated.
Transfer the mixture to an 8×8-inch baking dish or a medium-sized oval baking dish. Sprinkle the remaining ½ cup cheddar cheese and ½ cup mozzarella cheese evenly over the top.
Bake for 25 minutes, or until the dip is hot and bubbly.
For a golden, cheesy finish, broil for 1-2 minutes just before serving.
Serve warm with your favourite chips, crackers, pita, or fresh vegetables for dipping.
