Creamy Boursin & Chicken Pasta Bake

Creamy bow-tie pasta with chicken, cherry tomatoes, spinach, and herbs in a light sauce.

I’m trying this recipe out while the hubby is at work because he is not a cheese guy. I love recipes that take a couple of minutes to assemble and hit all of the right holistic nourishment factors: nutritious, delicious, and simple! Just make sure you get this baby in the oven in time before the kids’ activities!

INGREDIENTS:

1 package (150 g) Garlic & Fine Herbs Boursin cheese

250 g bow tie pasta

450 g boneless, skinless chicken breast, diced

2 pints (4 cups) cherry tomatoes

¼ cup red onion, thinly sliced

3 cloves garlic, minced

1 cup low-sodium chicken or vegetable broth

1 cup 0% plain Greek yogurt

1 tbsp olive oil

1 tsp dried oregano

1 tsp garlic powder

1 tsp onion powder

½ tsp sea salt

¼ tsp black pepper

4 cups baby spinach

¼ cup fresh basil, sliced

DIRECTIONS:

  1. Preheat oven to 400°F (200°C).
  2. Add pasta, tomatoes, onion, garlic, broth, olive oil, and seasonings to a 9 × 13-inch baking dish. Place the Boursin in the centre and scatter chicken around it. Gently toss to coat vegetables with liquid, being sure to leave the soft cheese in tact.
  3. Bake for 35-40 minutes, stirring once halfway through, until pasta is tender and chicken reaches 165°F (74°C).
  4. Stir everything together, gently crushing the tomatoes and melting the Boursin into the sauce.
  5. Let cool for 5 minutes, then stir in Greek yogurt, spinach, and basil until spinach wilts.
  6. Serve immediately.
