Zesty Southwest Salad Jar

Salad jars are one of my favorite meal prep staples for busy weeks. They’re easy to prepare ahead of time and make the perfect grab-and-go lunch for workdays. I even make them when I’m working from home because they let me enjoy my lunch break without spending time cooking or cleaning up in the middle of the day.

I love preparing three or four salad jars at the beginning of the week, then switching to a different salad recipe the following week to keep things fresh and interesting. It’s a simple way to save time, reduce stress, and make healthy eating a little easier.

INGREDIENTS:

For the Lime-Cilantro Vinaigrette

1/4 cup olive oil

2 tbsp lime juice (fresh or bottled)

1 tbsp chopped fresh cilantro (or 1 tsp dried)

1/2 tsp honey or maple syrup

Pinch of Cumin

Salt & pepper to taste

 

For the salad:

2 tbsp lime-cilantro vinaigrette

1/3 cup black beans
1/3 cup corn

1/2 cup cherry tomatoes, halved

3 oz grilled chicken, chopped

1 cup romaine, chopped

Optional: tortilla strips & diced avocado (add day-of)

 

DIRECTIONS:

  1. In a small mason jar or bowl, add vinaigrette ingredients and whisk or mix well.
  2. Starting with 2 tbsp of the lime-cilantro vinaigrette, layer the ingredients in order from the top of the list to the bottom. This will ensure that the salad doesn’t get soggy.
