Cottage Cheese Dessert Jars

We made this recipe this past weekend and it was delicious (despite finding out later on that the yogurt was expired 😬). But listen, just imagine how good it will be with fresh, unexpired yogurt! It’s super easy to make and an awesome high-protein dessert or snack. Enjoy!

INGREDIENTS:

1 cup cottage cheese

1 cup plain Greek yogurt

1/4 maple syrup

1 tsp vanilla extract

2 tbsp cocoa powder

1/4 cup melted semi-sweet chocolate

1 tsp coconut oil

Optional: Sea salt, peanuts or fresh berries as toppers

 

DIRECTIONS:

  1. Place cottage cheese, Greek yogurt, maple syrup, vanilla extract, and cocoa powder in the blender. Blend until you get a smooth consistency (about 2 minutes)
  2. Divide the mixture into 4 small bowls or mason jars.
  3. Melt chocolate and coconut oil in the microwave for 30 seconds (you can also melt it on the stove using the double boiler method. Pour over the pudding mixture in each jar.
  4. Optional: Sprinkle with sea salt, peanuts, fresh berries, or any other toppings of your choice.
  5. Place in the freezer for 10 minutes so that the chocolate hardens.
  6. Crack the chocolate topping with your spoon and enjoy!
