Black Bean Brownies

These brownies are more delicious than regular brownies in my opinion (and my kids agree!). Please don’t knock them until you try them. This recipe is another great example of how food can be both healthy and delicious!

INGREDIENTS:

1/2 cup quick oats

1 1/2 cups black beans (if using canned beans, be sure to rinse and drain well)

1/4 cup pure maple syrup 

1/4 cup coconut oil

2 tbsp cocoa powder 

1/4 tsp salt

2 tsp vanilla extract

1/2 tsp baking powder

1/2 cup chocolate chips + 1/4 for sprinkling on top at the end

DIRECTIONS:

  1. Preheat your oven to 350°F. Line an 8×8 inch baking pan with parchment paper.
  2. Add all ingredients to a food processor except the chocolate chips. Process on low until the mixture is completely smooth, stopping to scrape down the sides as needed. Make sure to blend very well as this makes a big difference for the final product.
  3. Stir in the chocolate chips by hand.
  4. Pour the batter into the prepared pan and spread evenly. Sprinkle extra chocolate chips over the top.
  5. Bake the brownies for 15 minutes. If the edges aren’t yet set, put them back in the oven for 2-3 more minutes.
  6. Cool for at least 10 minutes before slicing. If they seem underdone, refrigerate for 30+ minutes and they will firm up.
  7. Slice into squares and enjoy!


*Note: Refrigerate for up to 1 week in an air-tight container.
